Ingredients

  • 200 grams button mushrooms
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 garlic cloves
  • 500 grams ground beef
  • 250 grams ground pork
  • 2 large eggs
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 1 tablespoon Worcestershire sauce
  • 0.5 cup ketchup
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.33 cup parmesan cheese (optional)
  • 2 tablespoons fresh parsley (finely chopped)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet or loaf pan with parchment paper for easy cleanup.

Step 2

Clean and finely chop the mushrooms. Heat olive oil in a skillet over medium heat, add the mushrooms, and sauté until softened and most of the moisture has evaporated, about 7-8 minutes.

Step 3

Finely chop the onion and mince the garlic cloves. Add the onion and garlic to the skillet with the mushrooms and cook for another 3-4 minutes until the onions are translucent. Set aside to cool.

Step 4

In a large mixing bowl, combine the ground beef, ground pork, eggs, breadcrumbs, milk, Worcestershire sauce, ketchup, dried thyme, salt, black pepper, and the cooled mushroom mixture. Mix until just combined, being careful not to overwork the mixture.

Step 5

If desired, stir in the parmesan cheese and fresh parsley for additional flavor.

Step 6

Transfer the mixture to the prepared baking sheet or loaf pan and shape it into a loaf. Spread some additional ketchup over the top for a glaze, if desired.

Step 7

Bake in the preheated oven for 55-60 minutes, or until the internal temperature reaches 160°F (71°C).

Step 8

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve warm, garnished with additional parsley, if desired.
