Ingredients

  • 300 g spaghetti or linguine
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 300 g cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 0.5 tsp red pepper flakes (optional)
  • 0 to taste salt
  • 0 to taste black pepper, freshly ground
  • 2 tbsp fresh parsley, chopped (optional garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

Step 2

Heat the olive oil and butter in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.

Step 3

Add the sliced mushrooms to the skillet and sauté for 5-7 minutes until they release their moisture and become golden brown. Stir occasionally.

Step 4

Lower the heat and pour in the heavy cream. Stir to combine, then let the sauce simmer for 2-3 minutes.

Step 5

Stir in the grated parmesan cheese until it melts and the sauce becomes creamy. If the sauce gets too thick, add a splash of the reserved pasta water to reach your desired consistency.

Step 6

Season with salt, black pepper, and red pepper flakes (if using), adjusting to taste.

Step 7

Add the cooked pasta to the skillet and toss gently to coat the pasta evenly with the sauce.

Step 8

Remove from heat and garnish with fresh parsley if desired. Serve immediately.
