Ingredients

  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 3 cloves Garlic cloves, minced
  • 450 grams Button mushrooms, sliced
  • 150 grams Fresh baby spinach
  • 250 milliliters Heavy cream
  • 50 grams Parmesan cheese, grated
  • 0.25 teaspoons Nutmeg, freshly grated
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Heat a large skillet over medium heat and add the butter and olive oil. Let the butter melt completely.

Step 2

Add the minced garlic to the skillet and sauté for 1 minute, stirring frequently, until fragrant.

Step 3

Add the sliced mushrooms to the skillet. Sauté for 7-8 minutes, stirring occasionally, until the mushrooms release their moisture and turn golden brown.

Step 4

Add the fresh baby spinach to the skillet and sauté for 2-3 minutes until wilted. Stir to combine with the mushrooms.

Step 5

Reduce the heat to low and pour in the heavy cream. Stir gently to coat the vegetables.

Step 6

Add the Parmesan cheese, grated nutmeg, salt, and pepper. Stir continuously until the cheese melts and the sauce thickens, about 3-4 minutes.

Step 7

Remove the skillet from heat and sprinkle the chopped parsley over the top for garnish.

Step 8

Serve hot as a side dish or over cooked pasta or rice for a hearty main course.
