Ingredients

  • 2 sheets Puff pastry sheets
  • 250 grams Cremini mushrooms
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 large Shallot
  • 2 cloves Garlic cloves
  • 1 teaspoon Thyme leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 60 grams Cream cheese
  • 30 grams Parmesan cheese
  • 1 large Egg
  • 1 tablespoon Water

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Finely dice the cremini mushrooms, shallot, and garlic cloves.

Step 3

Heat a skillet over medium heat and add the butter and olive oil. Once melted, sauté the shallots until softened, about 2-3 minutes.

Step 4

Add the garlic and cook for an additional minute until fragrant.

Step 5

Stir in the diced mushrooms and fresh thyme leaves. Cook for 5-7 minutes, stirring occasionally, until the mushrooms release their water and it evaporates.

Step 6

Season the mushroom mixture with salt and black pepper. Remove from heat and let it cool slightly.

Step 7

In a mixing bowl, combine the cooled mushroom mixture with cream cheese and grated Parmesan cheese. Mix until evenly combined.

Step 8

Roll out the puff pastry sheets on a lightly floured surface and cut each sheet into 8 equal squares.

Step 9

Place about a tablespoon of the mushroom filling in the center of each square.

Step 10

Fold each square diagonally to form a triangle, then press the edges together with a fork to seal them.

Step 11

In a small bowl, whisk together the egg and water to make an egg wash.

Step 12

Brush the top of each pastry with the egg wash, then place them on the prepared baking sheet.

Step 13

Bake the pastries in the preheated oven for 18-20 minutes, or until golden brown and puffed.

Step 14

Allow the pastries to cool slightly before serving.
