Ingredients

  • 450 grams Cremini mushrooms
  • 2 medium Shallots
  • 2 large Garlic cloves
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 teaspoon Fresh thyme leaves
  • 60 milliliters Dry white wine
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Fresh parsley

Directions

Step 1

Clean the cremini mushrooms with a damp paper towel to remove any dirt. Roughly chop them into small pieces.

Step 2

Peel and finely mince the shallots and garlic cloves.

Step 3

Heat a large skillet over medium heat and add the olive oil and butter. Allow the butter to melt completely.

Step 4

Add the minced shallots and garlic to the skillet. Sauté for 2-3 minutes until softened and fragrant, stirring frequently.

Step 5

Increase the heat to medium-high and add the chopped mushrooms to the skillet. Cook for 6-8 minutes, stirring occasionally, until the mushrooms release their liquid and it mostly evaporates.

Step 6

Sprinkle in the fresh thyme leaves, salt, and black pepper. Stir well to evenly distribute the seasoning.

Step 7

Pour in the dry white wine and cook for another 2-3 minutes, allowing the liquid to reduce and the flavors to concentrate.

Step 8

Turn off the heat and stir in the freshly chopped parsley for a burst of color and freshness.

Step 9

Serve warm as a topping for bread, folded into omelets, stuffed into chicken, or used as a base for sauces.
