Ingredients

  • 200 grams white or cremini mushrooms
  • 3 tablespoons butter
  • 3 tablespoons heavy cream
  • 2 tablespoons grated Parmesan cheese
  • 1 medium (finely chopped) shallot
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 6 slices white sandwich bread
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Using a rolling pin, flatten each slice of sandwich bread until thin. Cut the bread into circles using a 3-inch cookie cutter.

Lightly grease a mini muffin tin with olive oil, then press a bread circle into each cavity to form a cup shape.

Brush the bread cups with a small amount of olive oil to help them crisp up. Bake in the preheated oven for 10–12 minutes, or until golden brown. Remove and let cool.
