Ingredients

  • 4 tablespoons Butter
  • 1 medium, diced Yellow onion
  • 3 minced Garlic cloves
  • 2 cups, sliced Button mushrooms
  • 2 cups, fresh or frozen Corn kernels
  • 2 tablespoons All-purpose flour
  • 1.5 cups Whole milk
  • 0.5 cups Heavy cream
  • 1.5 cups, shredded Cheddar cheese
  • 0.5 cups, grated Parmesan cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Breadcrumbs
  • 2 tablespoons Olive oil
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

In a large skillet, melt the butter over medium heat. Add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.

Step 3

Add the minced garlic and sliced mushrooms to the skillet. Cook for 5-6 minutes until the mushrooms release their moisture and begin to brown.

Step 4

Stir in the corn kernels and cook for another 2-3 minutes. Sprinkle the flour over the mixture and stir well to coat the vegetables evenly.

Step 5

Slowly pour in the milk and heavy cream while stirring constantly to prevent lumps. Cook for 3-4 minutes until the mixture thickens slightly.

Step 6

Remove the skillet from heat and stir in the shredded cheddar cheese, grated Parmesan cheese, salt, and black pepper until well combined.

Step 7

Transfer the mixture to the prepared baking dish, spreading it out evenly.

Step 8

In a small bowl, toss the breadcrumbs with olive oil. Sprinkle the breadcrumb mixture over the top of the casserole.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.

Step 10

Remove from the oven and let the casserole rest for 5 minutes before serving. Garnish with chopped fresh parsley, if desired.
