Ingredients

  • 1 cup Long-grain white rice
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 8 ounces Cremini mushrooms, thinly sliced
  • 2 cups Vegetable or chicken broth
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Fresh rosemary, finely chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Grated Parmesan cheese (optional for garnish)

Directions

Step 1

Rinse the rice under cold running water until the water runs clear. Drain and set aside.

Step 2

In a large, heavy-bottomed skillet or saucepan, melt the butter and olive oil over medium heat.

Step 3

Add the chopped onion and sauté for 3-4 minutes until translucent.

Step 4

Stir in the minced garlic and cook for an additional 30 seconds, being careful not to burn the garlic.

Step 5

Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until softened and lightly browned.

Step 6

Stir in the rinsed rice, ensuring it is well-coated in the butter and oil. Cook for 1-2 minutes to lightly toast the rice.

Step 7

Pour in the vegetable or chicken broth. Add the parsley, thyme, rosemary, salt, and black pepper. Stir to combine.

Step 8

Bring the mixture to a boil, then reduce the heat to low. Cover with a tight-fitting lid and simmer for 18-20 minutes, or until the rice is tender and has absorbed all the liquid.

Step 9

Remove the saucepan from heat and let it sit, covered, for 5 minutes to allow the flavors to meld.

Step 10

Fluff the pilaf with a fork and taste for seasoning, adjusting salt and pepper if needed.

Step 11

Transfer the pilaf to a serving dish and garnish with additional chopped parsley and grated Parmesan cheese, if desired. Serve warm.
