Ingredients

  • 400 grams macaroni pasta
  • 50 grams unsalted butter
  • 50 grams all-purpose flour
  • 750 milliliters whole milk
  • 200 grams sharp cheddar cheese, grated
  • 50 grams Parmesan cheese, grated
  • 1 teaspoon mustard powder
  • 0.5 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 50 grams panko breadcrumbs
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Bring a large pot of salted water to a boil and cook the macaroni pasta according to the package instructions until al dente. Drain and set aside.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to form a smooth roux and cook for 1-2 minutes to remove the raw flour taste.

Step 4

Slowly pour in the milk, a little at a time, whisking constantly to create a smooth, lump-free sauce. Continue to cook the sauce, stirring regularly, until it thickens, about 5-7 minutes.

Step 5

Remove the saucepan from heat and stir in the grated cheddar cheese and Parmesan cheese until fully melted. Add the mustard powder, paprika, salt, and black pepper, and mix well.

Step 6

Combine the cooked macaroni pasta with the cheese sauce, ensuring every piece is coated. Transfer the mixture to a lightly greased baking dish.

Step 7

In a small bowl, mix the panko breadcrumbs with olive oil until evenly coated. Sprinkle the breadcrumbs over the top of the macaroni cheese.

Step 8

Bake in the preheated oven for 20 minutes or until the top is golden and crispy.

Step 9

Let the dish cool for a few minutes before serving. Enjoy Mum's Macaroni Cheese warm!
