Ingredients

  • 1.25 cups Warm water
  • 3 tablespoons Honey
  • 2.25 teaspoons Active dry yeast
  • 2 cups Whole wheat flour
  • 1.5 cups Bread flour
  • 1.5 teaspoons Salt
  • 3 tablespoons Olive oil
  • 0.75 cup Seven grain cereal mix
  • 2 tablespoons Rolled oats (for garnish, optional)

Directions

Step 1

In a large mixing bowl, combine warm water and honey. Stir until honey is dissolved.

Step 2

Sprinkle the active dry yeast over the water and let it sit for 5-10 minutes until it becomes frothy.

Step 3

In a separate bowl, mix the whole wheat flour, bread flour, and salt together.

Step 4

Add olive oil and the seven grain cereal mix to the yeast mixture. Stir to combine.

Step 5

Gradually add the dry ingredients to the wet mixture, stirring until a shaggy dough forms.

Step 6

Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, until smooth and elastic. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.

Step 7

Place the dough in a lightly oiled bowl, turning to coat it in oil. Cover with a clean kitchen towel and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 8

Punch down the dough and shape it into a loaf. Transfer it to a lightly greased 9x5-inch loaf pan.

Step 9

Cover the loaf with the kitchen towel again and let it rise for another 30-40 minutes, until it has doubled in size.

Step 10

Preheat your oven to 375°F (190°C). If desired, lightly brush the top of the dough with water and sprinkle rolled oats for garnish.

Step 11

Bake the bread in the preheated oven for 40-45 minutes, or until the top is golden brown and the bread sounds hollow when tapped.

Step 12

Remove the bread from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing and serving.
