Ingredients

  • 750 ml Red wine
  • 200 g Granulated sugar
  • 1 whole Orange
  • 1 whole Cinnamon stick
  • 6 whole Cloves
  • 2 whole Star anise
  • 250 ml Water
  • 2 tbsp Brandy (optional)

Directions

Step 1

Pour the red wine and water into a medium saucepan.

Step 2

Add the granulated sugar to the saucepan and stir gently until dissolved.

Step 3

Peel the orange and add the peel (avoid the bitter white pith) to the saucepan. Then juice the orange and add the juice as well.

Step 4

Drop the cinnamon stick, cloves, and star anise into the mixture.

Step 5

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally. Do not boil, as you don't want to cook off the alcohol completely.

Step 6

Simmer for 15 minutes, allowing the spices to infuse into the liquid.

Remove the saucepan from the heat and allow the mixture to cool to room temperature. Once cooled, strain the liquid through a fine-mesh sieve to remove the solids.

Optionally, stir in 2 tablespoons of brandy for an extra kick.

Pour the strained mixture into a shallow freezer-safe container and place in the freezer.

Every 30 minutes, stir the mixture with a fork to break up ice crystals and ensure a smooth sorbet texture. Repeat this process for 3-4 hours until the sorbet is fully frozen.
