Ingredients

  • 150 grams rolled oats
  • 50 grams desiccated coconut
  • 50 grams almonds
  • 50 grams dried cranberries
  • 120 grams dates (pitted)
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons peanut butter (or almond butter)
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • 30 grams dark chocolate chips (optional)

Directions

Step 1

In a food processor, pulse the almonds until they are coarsely chopped. Add the rolled oats, desiccated coconut, dried cranberries, and chia seeds (if using). Pulse a few more times to combine.

Step 2

Add the pitted dates, honey or maple syrup, peanut butter, and vanilla extract to the food processor. Blend the mixture until it starts to come together and becomes slightly sticky. If the mixture is too dry, add an extra teaspoon of honey or water and blend again.

Step 3

Transfer the mixture to a bowl. If you are using dark chocolate chips, fold them in at this stage.
