Ingredients

  • 2 tablespoons vegetable oil
  • 8 ounces boneless pork loin (thinly sliced) or firm tofu (cubed)
  • 3 cups green cabbage (shredded)
  • 1 large carrot (julienned)
  • 1 cup shiitake mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1 teaspoon ginger (minced)
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • 1 large egg
  • 2 stalks green onions (sliced)
  • 8 pieces flour tortillas or Chinese pancakes
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 2

Add the pork slices (or tofu) and stir-fry until cooked through and lightly browned, about 4-5 minutes. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Stir in the garlic and ginger, cooking until fragrant, about 30 seconds.

Step 4

Add the shredded cabbage, carrot, and shiitake mushrooms to the skillet. Stir-fry for 4-5 minutes until the vegetables begin to soften.

Step 5

Return the cooked pork (or tofu) to the skillet. Stir in the soy sauce, hoisin sauce, and sesame oil. Mix well to coat everything evenly, cooking for another 2-3 minutes.

Step 6

Push the mixture to one side of the skillet and crack the egg on the empty side. Scramble it quickly until cooked, then mix it into the Mu Shu filling.

Adjust seasoning with salt and black pepper to taste. Remove the skillet from heat and stir in the sliced green onions.

Warm the flour tortillas or Chinese pancakes in the microwave or on a dry skillet until pliable.

Step 9

To serve, spoon a small amount of the Mu Shu filling onto the center of each tortilla or pancake. Fold and roll like a burrito. Serve immediately and enjoy!
