Ingredients

  • 2 cups Cooked chickpeas (or canned, drained and rinsed)
  • 2 cloves Garlic
  • 3 tablespoons Tahini
  • 3 tablespoons Fresh lemon juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Kosher salt
  • 3 tablespoons Water
  • 0.5 teaspoon Paprika (for garnish)
  • 2 tablespoons Chopped parsley (for garnish)
  • 2 tablespoons Pine nuts (optional, for garnish)

Directions

Step 1

In a small saucepan, combine the chickpeas with a splash of water and warm over medium heat for about 3-5 minutes. Remove from heat and set aside.

Step 2

While the chickpeas warm, finely mince the garlic cloves or crush them into a smooth paste using a mortar and pestle.

Step 3

In a small bowl, whisk together the tahini, lemon juice, crushed garlic, olive oil, cumin, salt, and water until smooth and creamy. Adjust the consistency with additional water if needed—the sauce should be pourable but thick.

Step 4

Transfer the warm chickpeas to a serving bowl and pour the tahini mixture over the top, gently stirring to coat the chickpeas evenly.

Step 5

Sprinkle the dish with paprika, chopped parsley, and toasted pine nuts, if desired.

Step 6

Serve immediately with fresh pita bread or vegetable sticks for dipping.
