Ingredients

  • 4 medium Potatoes
  • 1 large Onion
  • 2 medium Tomato
  • 3 pieces Garlic cloves
  • 1 inch Ginger
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Turmeric powder
  • 2 teaspoons Ground coriander
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 1.5 cups Water
  • 2 tablespoons Fresh cilantro

Directions

Step 1

Peel the potatoes and cut them into bite-sized cubes. Rinse thoroughly and set aside.

Step 2

Finely chop the onion, tomatoes, garlic, and ginger.

Step 3

Heat vegetable oil in a deep pan or pot over medium heat. Once hot, add the cumin seeds and let them sizzle for 30 seconds.

Step 4

Add the chopped onion and sauté until golden brown, about 5-7 minutes.

Step 5

Stir in the garlic and ginger, and cook for 1 minute until fragrant.

Step 6

Add the tomatoes, turmeric powder, ground coriander, ground cumin, red chili powder, and salt. Cook until the tomatoes break down and the oil starts to separate, about 5-7 minutes.

Step 7

Add the cubed potatoes to the pan and mix well to coat them evenly with the spice mixture.

Step 8

Pour in the water and bring the curry to a boil. Then reduce the heat to medium-low, cover, and let it simmer for 15-20 minutes or until the potatoes are tender.

Step 9

Stir in the garam masala and let it cook for another 2 minutes.

Step 10

Taste and adjust salt or spice levels as needed.

Step 11

Garnish with freshly chopped cilantro and serve hot with rice or flatbread.
