Ingredients

  • 500 grams Large prawns (peeled and deveined, tails on)
  • 3 tablespoons Olive oil
  • 4 units Garlic cloves (minced)
  • 1 tablespoon Fresh ginger (grated)
  • 2 units Red chili peppers (finely chopped, adjust to taste)
  • 1 teaspoon Smoked paprika
  • 2 tablespoons Lemon juice
  • 200 milliliters Coconut milk
  • 2 tablespoons Tomato paste
  • 2 tablespoons Fresh cilantro (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 50 milliliters Water (optional, to adjust sauce consistency)

Directions

Step 1

Rinse the prawns under cold water and pat them dry with paper towels. Set aside.

Step 2

Heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic, grated ginger, and chopped red chili peppers to the skillet. Sauté for 1-2 minutes until fragrant.

Step 4

Stir in the smoked paprika and tomato paste, cooking for another 1 minute to release the flavors.

Step 5

Add the prawns to the skillet and cook for 2-3 minutes on each side, or until they turn pink and are fully cooked through. Remove the prawns from the skillet and set them aside.

Step 6

Reduce the heat to low and pour in the coconut milk and lemon juice. Stir to combine and let the sauce simmer for 3-5 minutes, adding water if needed to adjust the consistency.

Step 7

Season the sauce with salt and black pepper to taste.

Step 8

Return the cooked prawns to the skillet, tossing to coat them evenly in the sauce. Allow them to heat through for another 1-2 minutes.

Step 9

Garnish with freshly chopped cilantro before serving.

Step 10

Serve hot with steamed rice, crusty bread, or on their own as an appetizer.
