  • 600 grams ripe tomatoes
  • 2 tablespoons olive oil
  • 2 whole shallots, finely chopped
  • 2 whole garlic cloves, minced
  • 2 tablespoons unsweetened tomato paste
  • 10 leaves fresh basil leaves, chopped
  • 1 packet gelatin powder
  • 4 tablespoons cold water
  • 150 milliliters heavy cream
  • 0.5 teaspoons salt
  • 0.25 teaspoons pepper
  • 0.5 teaspoons sugar

Directions

Step 1

Bring a large pot of water to a boil. Score a small 'X' at the base of each tomato, blanch them in the boiling water for 30 seconds, then transfer them to an ice bath. Peel the skins, remove the seeds, and roughly chop the tomatoes.

Step 2

Heat olive oil in a medium saucepan over medium heat. Add the finely chopped shallots and minced garlic. Sauté for 2-3 minutes until translucent and fragrant.

Add the chopped tomatoes, tomato paste, basil leaves, salt, pepper, and sugar. Simmer the mixture for 10 minutes, stirring occasionally, until it thickens slightly.
