Ingredients

  • 2 lbs Chicken wings
  • 3 tbsp Olive oil
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Paprika
  • 0.5 tsp Turmeric
  • 0.25 tsp Ground cinnamon
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Couscous
  • 1 cup Chicken broth
  • 2 tbsp Lemon juice
  • 2 tbsp Fresh parsley
  • 2 tbsp Fresh cilantro
  • 1 tbsp Fresh mint
  • 1 tbsp Unsalted butter

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it.

Step 2

In a large bowl, combine olive oil, cumin, coriander, paprika, turmeric, cinnamon, garlic powder, salt, and black pepper. Stir until it forms a smooth paste.

Step 3

Add the chicken wings to the bowl and toss to coat each wing evenly with the spice mixture.

Step 4

Lay the wings in a single layer on the prepared baking sheet and bake for 35–40 minutes, flipping halfway through, until they are golden brown and cooked through.

Step 5

While the wings are baking, prepare the couscous. In a medium saucepan, bring the chicken broth to a boil. Stir in the couscous, turn off the heat, cover, and let it sit for 5 minutes.

Step 6

Fluff the couscous with a fork and stir in the butter until melted. Add lemon juice, chopped parsley, cilantro, and mint, mixing gently to combine.

Step 7

Once the wings are done, remove them from the oven and let them rest for 5 minutes.

Step 8

Serve the wings hot with the herb couscous on the side for a complete Moroccan-inspired meal.
