  • 1 14-ounce can diced tomatoes
  • 1 15-ounce can chickpeas, drained and rinsed
  • 4 cups chicken or turkey broth
  • 2 cups baby spinach
  • 1 tablespoon lemon juice
  • 0.25 cup fresh cilantro, chopped (optional, for garnish)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the ground turkey and cook, breaking it up with a wooden spoon, until no longer pink, about 5-7 minutes. Transfer the cooked turkey to a plate and set aside.
