Ingredients

  • 1000 g lamb shoulder, cubed
  • 3 tbsp olive oil
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1.5 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp paprika
  • 0.25 tsp cayenne pepper
  • 400 g chopped tomatoes
  • 500 ml chicken or beef stock
  • 1.5 tbsp honey
  • 100 g dried apricots, halved
  • 50 g blanched almonds, toasted
  • 2 tbsp fresh cilantro, chopped
  • 0.5 lemon, juiced
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Step 2

Season the cubed lamb with salt and pepper, then sear in batches until browned on all sides. Remove and set aside.

Step 3

Reduce heat to medium and add the remaining 1 tablespoon of olive oil to the pot. Sauté the chopped onion until softened, about 5 minutes.

Step 4

Stir in the minced garlic, ground cumin, ground coriander, ground cinnamon, ground ginger, paprika, and cayenne pepper. Cook for 1-2 minutes until fragrant.

Step 5

Add the chopped tomatoes and stir to combine, scraping the bottom of the pot to deglaze.

Step 6

Pour in the chicken or beef stock and stir. Bring the mixture to a boil, then reduce the heat to low.

Step 7

Return the browned lamb to the pot, cover, and let it simmer gently for 1 hour, stirring occasionally.

Step 8

After 1 hour, add the honey, dried apricots, toasted almonds, and lemon juice. Stir well and continue to simmer for another 30 minutes, uncovered, until the lamb is tender and the sauce has thickened.

Step 9

Taste and adjust seasoning with additional salt or pepper if needed.

Step 10

Sprinkle the chopped cilantro over the dish just before serving.

Step 11

Serve the Moroccan Style Lamb with couscous or warm flatbread.
