  • 4 cups beef broth
  • 1 14 oz can diced tomatoes
  • 3 medium carrots, peeled and sliced into rounds
  • 0.5 cup golden raisins
  • 0.5 cup dried apricots, chopped
  • 1 15 oz can chickpeas, drained and rinsed
  • 0.25 cup fresh cilantro, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 2

Season the beef cubes with salt and black pepper. Add half of the beef to the pot and sear on all sides until browned, about 4-5 minutes. Remove and repeat with the second batch, adding the remaining tablespoon of olive oil if needed. Set the browned beef aside.
