Ingredients

  • 2 teaspoons green tea leaves (preferably Chinese gunpowder tea)
  • 10 sprigs fresh mint leaves
  • 4 tablespoons granulated sugar
  • 4 cups water

Directions

Step 1

Bring 4 cups of water to a boil in a medium-sized pot or kettle.

Step 2

Rinse teapot with a small amount of boiling water to warm it up, then discard the water.

Step 3

Place 2 teaspoons of green tea leaves into the teapot.

Step 4

Pour about 1/2 cup of boiling water over the tea leaves to rinse and awaken the tea. Swirl the water around inside the teapot, then carefully discard this water while keeping the leaves in the pot.

Step 5

Add 4 tablespoons of granulated sugar and 10 fresh mint sprigs directly into the teapot.

Step 6

Pour the remaining boiling water (about 3 1/2 cups) into the teapot, filling it completely.

Step 7

Cover the teapot and let the tea steep for 5 minutes.

Step 8

To mix the tea, pour the tea into a glass and back into the teapot two or three times. This aerates the tea and ensures all the flavors are combined.

Step 9

Serve the tea hot in small tea glasses. Optionally, garnish with additional mint leaves for presentation.
