  • 2 medium zucchini, sliced into rounds
  • 0.25 cup slivered almonds, toasted
  • 0.25 cup fresh cilantro, chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups cooked couscous or rice (optional, for serving)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large Dutch oven or deep skillet over medium-high heat.

Season the chicken thighs with a pinch of salt and pepper, then sear them in the hot oil for 5-6 minutes per side, until golden brown. Remove the chicken and set aside.
