Ingredients

  • 500 grams carrots
  • 3 tablespoons extra virgin olive oil
  • 2 pieces garlic cloves
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 0.25 teaspoons ground cinnamon
  • 1 teaspoon ground coriander
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 0.25 teaspoons freshly ground black pepper
  • 2 tablespoons fresh cilantro leaves
  • 2 tablespoons golden raisins (optional)

Directions

Step 1

Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

Peel and cut the carrots into even-sized chunks about 2-3 cm (1 inch) thick.

Step 3

In a mixing bowl, toss the carrot chunks with 2 tablespoons of olive oil, 1/2 teaspoon of salt, and freshly ground black pepper.

Spread the carrots evenly on the prepared baking tray and roast in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized, flipping them halfway through.
