Ingredients

  • 400 grams canned chickpeas
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 0.5 teaspoon ground cinnamon
  • 200 grams mixed salad greens
  • 250 grams cherry tomatoes
  • 1 medium cucumber
  • 1 small red onion
  • 2 tablespoons fresh cilantro
  • 2 tablespoons fresh mint
  • 3 tablespoons orange juice
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 50 grams slivered almonds

Directions

Step 1

Drain and rinse the chickpeas thoroughly under cold water and pat them dry with a paper towel.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chickpeas, ground cumin, ground paprika, and ground cinnamon. Cook for 4-5 minutes, stirring frequently, until the chickpeas are warmed through and lightly toasted. Remove from heat and let cool slightly.
