  • 2 medium potatoes, peeled and cut into chunks
  • 6 pieces dried apricots, halved
  • 1 tbsp honey
  • 1 cup cooked chickpeas, rinsed and drained
  • 0.25 cup fresh cilantro, chopped (for garnish)
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large, heavy-bottomed pot or tagine over medium-high heat.

Season the beef cubes with salt and black pepper, then brown them in batches until golden on all sides. Remove the beef and set aside.

Add the remaining tablespoon of olive oil to the pot. Sauté the chopped onion for 5-6 minutes until soft and translucent.
