Ingredients

  • 1000 grams beef stew meat
  • 3 tablespoons olive oil
  • 1 large (chopped) onion
  • 3 minced garlic cloves
  • 1 teaspoon ground cinnamon
  • 2 teaspoons ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 500 milliliters beef stock
  • 3 tablespoons honey
  • 400 grams canned diced tomatoes
  • 150 grams dried apricots
  • 100 grams raisins or sultanas
  • 50 grams (optional, for garnish) slivered almonds
  • 2 tablespoons (chopped, for garnish) fresh cilantro
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper

Directions

Step 1

Heat 2 tablespoons of olive oil in a large tagine or heavy-bottomed pot over medium-high heat.

Step 2

Season the beef with salt and pepper. Brown the beef in batches, ensuring all sides are seared. Remove the browned beef and set aside.

Step 3

Lower the heat to medium and add the remaining 1 tablespoon of olive oil to the pot.

Step 4

Add the chopped onion and cook until softened, about 5 minutes. Stir frequently to avoid burning.

Step 5

Add the minced garlic, cinnamon, cumin, ginger, paprika, and turmeric. Cook for 1-2 minutes until aromatic.

Step 6

Return the beef to the pot. Stir to coat the beef with the spice mixture.

Step 7

Pour in the beef stock and canned diced tomatoes. Stir well to combine.

Step 8

Bring the mixture to a simmer, cover, and lower the heat. Cook gently for 1 hour, stirring occasionally.

Step 9

After 1 hour, add the honey, dried apricots, and raisins. Stir to incorporate.

Step 10

Continue to cook, covered, for another 30-45 minutes, or until the beef is tender and the sauce has thickened.

Step 11

Taste and adjust seasoning with additional salt or pepper, if needed.

Step 12

Serve hot, garnished with fresh cilantro and slivered almonds (if using). Pair with couscous or crusty bread for a complete meal.
