Ingredients

  • 2 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar, packed
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 2 cups carrots, grated
  • 1 large apple, peeled and grated
  • 0.5 cup raisins
  • 0.5 cup sweetened shredded coconut
  • 0.5 cup chopped walnuts or pecans
  • 3 large eggs
  • 0.67 cup vegetable oil (or melted coconut oil)
  • 2 teaspoons vanilla extract
  • 0.25 cup orange juice

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners or lightly grease the tin.

Step 2

In a large bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking soda, cinnamon, nutmeg, and salt.

Step 3

Stir in the grated carrots, grated apple, raisins, shredded coconut, and chopped nuts until they are evenly distributed in the dry mixture.

Step 4

In a separate medium bowl, whisk the eggs, vegetable oil, vanilla extract, and orange juice until well combined.

Step 5

Pour the wet ingredients into the bowl of dry ingredients and gently mix with a spatula until just combined. Be careful not to overmix to keep the muffins tender.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 22 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store any leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
