Ingredients

  • 325 grams All-purpose flour
  • 50 grams Granulated sugar
  • 1 teaspoon Salt
  • 2.25 teaspoons Instant yeast
  • 120 milliliters Whole milk
  • 60 grams Unsalted butter (softened)
  • 2 units Eggs (large)
  • 140 grams Unsalted butter (for laminating)
  • 100 grams Brown sugar
  • 1.5 teaspoons Ground cinnamon
  • 1 tablespoon Orange zest
  • 50 grams Granulated sugar (for coating)

Directions

Step 1

In a large mixing bowl, combine the flour, granulated sugar, salt, and instant yeast.

Warm the milk to lukewarm and add to the dry ingredients along with the softened butter and eggs. Mix until a rough dough forms.

Step 3

Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover, and let it rise for 1.5 to 2 hours or until doubled in size.

Step 4

While the dough rises, prepare the butter for laminating. Place the chilled butter (140g) between two sheets of parchment paper and roll it into a rectangle approximately 8x6 inches. Chill until firm.

Once the dough has risen, roll it out on a lightly floured surface into a rectangle about 12x10 inches. Place the butter block in the center of the dough, fold the dough over it, and seal the edges to encase the butter completely.
