Ingredients

  • 1 pound Shrimp (peeled and deveined)
  • 3 large Eggs
  • 2 tablespoons Vegetable oil
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (minced)
  • 3 Green onions (sliced)
  • 1 cup Shiitake mushrooms (sliced)
  • 2 cups Cabbage (shredded)
  • 1 cup Carrots (julienned)
  • 2 tablespoons Soy sauce
  • 2 tablespoons Hoison sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water
  • 1 teaspoon Sesame oil
  • 8 Mandarin pancakes (or lettuce leaves for wrapping)

Directions

Step 1

Whisk the eggs in a small bowl. Heat a nonstick skillet over medium heat, add 1 teaspoon of vegetable oil, and pour in the eggs. Cook, stirring gently, until softly scrambled. Remove and set aside.

Step 2

In a small bowl, whisk together soy sauce, hoison sauce, oyster sauce, cornstarch, and water. Set aside.

Step 3

Heat the remaining vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
