Ingredients

  • 1 pound Flank steak
  • 3 tablespoons Soy sauce
  • 3 tablespoons Hoisin sauce
  • 1 tablespoon Rice vinegar
  • 2 teaspoons Sesame oil
  • 1 teaspoon Cornstarch
  • 2 tablespoons Vegetable oil
  • 2 Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 4 Green onions, thinly sliced
  • 3 cups Shredded green cabbage
  • 2 Carrots, julienned
  • 2 Eggs, beaten
  • 6 Flour tortillas (8-inch)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Thinly slice the flank steak against the grain and place it in a medium-sized bowl.

Step 2

In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, and cornstarch to create the marinade. Pour it over the sliced beef, tossing to coat evenly. Let it marinate for 15 minutes while you prepare the vegetables.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef, spreading it out in an even layer, and cook for 2-3 minutes on each side until browned and cooked through. Remove the beef from the pan and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Stir in the minced garlic and grated ginger, cooking for 30 seconds until fragrant.

Step 5

Add the green onions, shredded cabbage, and julienned carrots to the skillet. Sprinkle with salt and pepper, and stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.

Step 6

Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty side, scrambling them gently until cooked through, then mix them into the vegetables.

Step 7

Return the cooked beef to the skillet and toss everything together until evenly combined. Adjust seasoning with additional soy sauce if needed.

Step 8

Warm the flour tortillas in a dry skillet or microwave until pliable.

Step 9

Fill each tortilla with a generous scoop of the Moo Shu beef and vegetable mixture. Roll up the tortilla, folding in the edges to create a wrap, or serve open-faced.

Step 10

Serve immediately and enjoy your flavorful Moo Shu Beef Tortillas!
