Ingredients

  • 4 pieces chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 1 cup BBQ sauce
  • 8 slices bacon
  • 1 cup cheddar cheese
  • 1 cup monterey jack cheese
  • 1 large, diced roma tomato
  • 2 stalks, sliced green onions

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the chicken breasts on both sides with salt, black pepper, garlic powder, and smoked paprika.

Step 3

Heat olive oil in a large oven-safe skillet over medium heat. Add the chicken breasts and sear them for 3-4 minutes per side until golden brown. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, cook the bacon slices over medium heat until crispy. Remove the bacon and place it on a paper towel-lined plate. Reserve the bacon grease in the skillet.

Step 5

Return the seared chicken breasts to the skillet. Brush BBQ sauce generously over the top of each chicken breast.

Step 6

Crumble the cooked bacon and sprinkle it evenly over the chicken breasts.

Step 7

Top each chicken breast with a mixture of shredded cheddar and monterey jack cheeses.

Step 8

Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).

Step 9

Once out of the oven, sprinkle the diced roma tomato and sliced green onions over the chicken for a fresh garnish.

Step 10

Serve hot with your favorite sides, such as mashed potatoes, a green salad, or roasted vegetables. Enjoy!
