Ingredients

  • 4 pieces large ripe tomatoes
  • 1 cup (shredded) Monterey Jack cheese
  • 4 ounces (softened) cream cheese
  • 2 tablespoons (chopped) fresh parsley
  • 2 cloves (minced) garlic
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons (grated) Parmesan cheese

Directions

Step 1

Preheat the oven to 375°F (190°C) and lightly grease a baking dish.

Step 2

Cut the tops off the tomatoes and scoop out the seeds and pulp with a spoon, creating hollow cups. Be careful not to puncture the sides or bottom. Lightly season the inside of each tomato with a pinch of salt and set them upside down on a paper towel to drain while preparing the filling.
