Ingredients

  • 4 pieces Chicken breasts
  • 1 cup Monterey Jack cheese
  • 8 slices Cooked bacon
  • 0.5 cup Barbecue sauce
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Step 2

Clean and pat dry the chicken breasts. Using a sharp knife, carefully butterfly each chicken breast to create a pocket for the filling.

Step 3

Season the chicken on both sides with salt, black pepper, garlic powder, and paprika.

Step 4

Place 2 slices of cooked bacon and 2 tablespoons of shredded Monterey Jack cheese inside each chicken breast pocket. Drizzle about a tablespoon of barbecue sauce over the filling in each pocket.

Step 5

Secure the chicken breasts with toothpicks to ensure the filling stays in place while cooking.

Step 6

Heat olive oil in a large skillet over medium heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown. (You don’t need to cook them through as they will finish baking in the oven.)

Step 7

Transfer the seared chicken breasts to the prepared baking dish. Brush the tops with the remaining barbecue sauce.

Step 8

Bake in the preheated oven for 25-30 minutes or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

Step 9

Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with fresh parsley, if desired.

Step 10

Serve the Monterey Chicken Rolls with your favorite sides like mashed potatoes, roasted vegetables, or a crisp green salad.
