Ingredients

  • 125 grams Unsalted butter, softened
  • 125 grams Caster sugar
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 185 grams Plain flour
  • 50 grams Self-raising flour
  • 35 grams Desiccated coconut
  • 80 grams Raspberry jam
  • 90 grams Icing sugar
  • 40 grams Unsalted butter, softened (for filling)
  • 1 teaspoon Milk

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking trays with baking paper.

Step 2

In a large mixing bowl, beat the softened butter, caster sugar, and vanilla extract together until light and fluffy using an electric mixer.

Step 3

Add the egg to the mixture and beat until fully combined.

Step 4

Sift in the plain flour and self-raising flour, then fold them into the wet ingredients with a spatula. Add the desiccated coconut and gently mix until a dough forms.

Roll heaped teaspoons of dough into small balls and place them onto the prepared trays, spacing them about 4cm apart. Flatten each ball slightly with a fork to create a pattern.

Bake the biscuits in the preheated oven for 12-15 minutes or until golden around the edges. Remove from the oven and allow them to cool on the trays for 5 minutes before transferring to a wire rack to cool completely.

To prepare the filling, mix the softened butter, icing sugar, and milk in a bowl until smooth and creamy.

Once the biscuits are completely cool, spread a small amount of raspberry jam on the flat side of half the biscuits. Spread a layer of the prepared filling on the flat side of the remaining biscuits.

Sandwich the jam and filling sides together to assemble the Monte Carlos.
