  • 4 large Russet potatoes
  • 1 whole Garlic bulb
  • 6 tablespoons Unsalted butter
  • 1 cup Milk
  • 1.5 cups Shredded cheddar cheese
  • 1 large Yellow onion
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the top off the garlic bulb to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap it in foil, and roast in the oven for 25-30 minutes until soft and golden.

While the garlic roasts, peel the potatoes and cut them into 1-inch chunks. Place the potato pieces in a large pot, cover them with cold water, and add a generous pinch of salt.

Bring the pot to a boil over high heat, then reduce the heat and simmer for about 15 minutes or until the potatoes are fork-tender.
