Ingredients

  • 3 lbs russet potatoes
  • 6 tbsp unsalted butter
  • 1.5 cups whole milk
  • 0.5 cups sour cream
  • 1 head garlic
  • 2 tbsp chopped fresh parsley
  • 1 cup shredded sharp cheddar cheese
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tbsp olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice off the top of the garlic head to expose the cloves, drizzle with olive oil, and wrap in aluminum foil. Roast in the oven for 30 minutes, or until the cloves are soft and golden.

Step 3

While the garlic roasts, peel the potatoes and cut them into evenly-sized chunks. Place them in a large pot and cover with cold water.

Step 4

Add 1 teaspoon of salt to the water and bring it to a boil over medium-high heat. Reduce to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.

Step 5

Drain the potatoes and return them to the pot. Allow them to sit for 1-2 minutes to let any excess moisture evaporate.

Step 6

Squeeze the roasted garlic cloves out of their skins and mash them into a paste.

Step 7

In a small saucepan, heat the milk and butter over low heat until the butter is melted. Do not let it boil.

Step 8

Mash the potatoes using a potato masher or a ricer for smoother results. Gradually mix in the warm milk-butter mixture, sour cream, and roasted garlic paste.

Step 9

Stir in the cheddar cheese until melted and incorporated. Season with the remaining teaspoon of salt and the black pepper.

Step 10

Fold in the parsley for a pop of color and freshness.

Step 11

Serve immediately in a large bowl or platter, and enjoy your Monster Mashed Potatoes!
