Ingredients

  • 4 fillets (about 6 oz each) monkfish fillets
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 3 tablespoons olive oil
  • 2 cloves garlic cloves, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 slices (for garnish) lemon slices

Directions

Step 1

Pat the monkfish fillets dry with paper towels. Season both sides evenly with salt and black pepper.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the seasoned monkfish fillets to the pan.

Step 3

Cook the fillets for 3-4 minutes on one side until golden brown. Flip them carefully and continue cooking for another 3-4 minutes, or until the fish is opaque and flakes easily with a fork. Remove the fillets from the skillet and set aside on a plate.

Step 4

In the same skillet, add 1 more tablespoon of olive oil and the butter. Reduce the heat to low and stir in the minced garlic. Cook for 1 minute until fragrant, being careful not to burn the garlic.

Step 5

Add the fresh lemon juice, lemon zest, thyme leaves, and chopped parsley to the garlic butter sauce. Stir well and let it simmer for 1-2 minutes to combine the flavors.

Step 6

Return the monkfish fillets to the skillet, spooning the lemon butter sauce over them. Let them warm through for about 1-2 minutes.

Step 7

Transfer the monkfish fillets to serving plates. Drizzle any leftover lemon butter sauce over the top, and garnish each serving with a slice of lemon.

Step 8

Serve immediately with your choice of sides, such as steamed vegetables, rice, or roasted potatoes.
