Ingredients

  • 4 bell peppers (medium-large, any color)
  • 1 pound ground beef (85% lean)
  • 1 cup cooked white or brown rice
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1.5 cups tomato sauce
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and set aside.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for another 30 seconds until fragrant.

Add the ground beef to the skillet and cook, breaking it apart with a wooden spoon, until no longer pink, about 6-8 minutes. Drain any excess grease if necessary.
