Ingredients

  • 2 pounds ground beef
  • 1 large yellow onion
  • 3 large garlic cloves
  • 28 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 15 ounces canned kidney beans
  • 15 ounces canned black beans
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 0 optional toppings (shredded cheese, sour cream, chopped green onions, fresh cilantro)

Directions

Step 1

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the ground beef to the pot and cook until browned, breaking it up with a wooden spoon as it cooks. Drain any excess fat and set the cooked beef aside.

Step 3

Finely dice the onion and mince the garlic cloves. Add them to the same pot and sauté over medium heat until the onions become translucent, about 5 minutes.

Step 4

Return the cooked ground beef to the pot. Stir in the canned diced tomatoes, tomato sauce, and beef broth.

Step 5

Rinse and drain the canned kidney beans and black beans. Add them to the pot, gently stirring until evenly combined.

Step 6

Season the chili with chili powder, cumin, paprika, dried oregano, salt, and black pepper. Stir well to distribute the spices.

Step 7

Bring the chili to a gentle boil, then reduce the heat to low. Simmer, uncovered, for 30-40 minutes to allow the flavors to meld, stirring occasionally.

Step 8

Taste and adjust seasonings if necessary. If the chili is too thick for your liking, add a splash of water or more beef broth to thin it out.

Step 9

Serve hot with your favorite toppings such as shredded cheese, sour cream, chopped green onions, or fresh cilantro.
