Ingredients

  • 4 English muffins
  • 4 Large eggs
  • 0.5 pounds Ground breakfast sausage
  • 4 Slices of cheddar cheese
  • 2 tablespoons Unsalted butter
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 Cooking spray

Directions

Step 1

Preheat a nonstick skillet over medium heat.

Step 2

Divide the ground breakfast sausage into 4 equal portions and shape each portion into a patty about the size of the English muffin. Place the sausage patties in the preheated skillet and cook for 3-4 minutes on each side, or until browned and fully cooked. Remove from the skillet and set aside.

Step 3

While the sausage patties are cooking, split the English muffins in half and lightly toast them in a toaster or toaster oven. Spread each half with a small amount of unsalted butter while warm.

Step 4

Spray a round egg ring or small nonstick pan with cooking spray, then place it in the skillet. Crack one egg into the ring, sprinkle with a pinch of salt and pepper, and cook for 3-4 minutes, or until the egg white is set but the yolk is still slightly runny. Repeat for the remaining eggs.

Step 5

Assemble the sandwiches: Place one sausage patty on the bottom half of an English muffin, followed by a slice of cheddar cheese. Top with a cooked egg and then place the other half of the English muffin on top.

Step 6

Serve immediately or wrap tightly in foil if preparing for later. If reheating, warm the sandwich in the oven at 350°F (175°C) for about 10 minutes, or until heated through.
