Ingredients

  • 115 grams Unsalted butter
  • 200 grams Granulated sugar
  • 120 milliliters Dark molasses
  • 120 milliliters Heavy cream
  • 1 teaspoon Salt
  • 1 teaspoon Vanilla extract

Directions

Step 1

Prepare a square 8x8-inch baking pan by lining it with parchment paper. Grease the parchment lightly with butter to prevent sticking.

Step 2

In a heavy-bottomed saucepan, combine butter, granulated sugar, molasses, heavy cream, and salt.

Step 3

Place the saucepan over medium heat and stir constantly until the butter is melted and the sugar has dissolved.

Step 4

Increase the heat to medium-high and bring the mixture to a boil. Insert a candy thermometer and continue to cook, stirring occasionally, until the mixture reaches 250°F (121°C) for soft-chewy toffees or 260°F (127°C) for firmer toffees.

Step 5

Once the desired temperature is reached, immediately remove the pan from heat and stir in the vanilla extract.

Step 6

Carefully pour the hot toffee mixture into the prepared pan, spreading it evenly. Allow it to cool slightly at room temperature for 5-10 minutes.

Step 7

While the toffee is still pliable, use a sharp knife to score it into bite-sized squares. Let the toffee cool completely in the pan until fully set, about 2-3 hours, or refrigerate for faster results.

Step 8

Once the toffee is firm, remove it from the pan, peel off the parchment, and break or cut along the score lines.

Step 9

Wrap each toffee piece in wax paper to prevent sticking and store in an airtight container at room temperature for up to two weeks.
