Ingredients

  • 3 cups All-purpose flour
  • 2 teaspoons Instant coffee powder
  • 2 tablespoons Unsweetened cocoa powder
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Salt
  • 2.25 teaspoons Active dry yeast
  • 1 cup Warm water (about 110°F/43°C)
  • 2 tablespoons Unsalted butter, melted
  • 0.25 cup Baking soda
  • 8 cups Water for boiling
  • 0 optional Coarse sea salt (for sprinkling)
  • 1 cup Semi-sweet chocolate chips
  • 0.25 cup Heavy cream
  • 0.5 teaspoons Instant coffee powder for glaze

Directions

Step 1

In a mixing bowl, combine the flour, instant coffee powder, cocoa powder, sugar, salt, and yeast.

Step 2

Add warm water and melted butter to the dry ingredients. Mix until the dough comes together.

Step 3

Knead the dough on a lightly floured surface for about 5–7 minutes until it becomes smooth and elastic.

Step 4

Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise for 1 hour in a warm location until doubled in size.

Step 5

Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.

Step 6

Divide the dough into 8 equal portions. Roll each portion into a long rope (about 18 inches) and shape it into a pretzel.

Step 7

Bring 8 cups of water to a boil in a large pot. Add the baking soda to the boiling water.

Step 8

Carefully drop the pretzels into the boiling water, one at a time, for about 20–30 seconds. Use a slotted spatula to remove them and place them on the prepared baking sheets.

Step 9

If desired, sprinkle coarse sea salt on the pretzels for extra flavor.

Step 10

Bake the pretzels in the preheated oven for 12–15 minutes or until golden brown. Allow them to cool slightly on a wire rack.

Step 11

While the pretzels cool, prepare the chocolate glaze. In a small saucepan, heat the heavy cream until it simmers. Remove from heat and stir in the chocolate chips and instant coffee powder until smooth and glossy.

Step 12

Drizzle the mocha chocolate glaze over the cooled pretzels or dip each one into the glaze for a richer finish. Optional: Garnish with additional chocolate shavings or a dusting of cocoa powder.

Step 13

Serve warm and enjoy your delicious Mokka Chocolate Pretzels!
