  • 2 large red bell peppers
  • 4 cloves garlic cloves
  • 2 teaspoons paprika
  • 1 teaspoon cumin seeds

  • 120 milliliters olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 30 grams crusty bread or almonds (optional thickener)
  • 3 tablespoons water

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Cut the red bell peppers in half and remove the seeds and stem. Place them cut-side down on the prepared baking sheet.

Roast the peppers in the preheated oven for 15 minutes, or until the skins are charred and wrinkled. Remove from the oven and cover them with a clean towel or plastic wrap to let them steam for 5 minutes. This will make the skins easier to peel.
