  • 120 ml Lime juice (freshly squeezed)
  • 100 g Granulated sugar
  • 250 ml Water
  • 2.5 tbsp Gelatin powder
  • 60 ml White rum
  • 10 leaves Fresh mint leaves
  • 1 whole lime Lime zest
  • 100 ml Optional: Soda water

Directions

Step 1

In a small saucepan, combine the lime juice, granulated sugar, and water. Heat gently over medium heat, stirring frequently, until the sugar is fully dissolved.

Step 2

Add the fresh mint leaves and lime zest to the mixture. Reduce the heat to low and let it steep for 5 minutes to infuse the mint flavor. Remove from heat and strain the mixture into a clean bowl to remove the mint leaves and zest. Set aside to cool slightly.

In a small bowl, bloom the gelatin by sprinkling it over 50 ml of cold water. Let it sit for 5 minutes until the gelatin has absorbed the liquid and softened.
