  • 2 envelopes Unflavored gelatin powder
  • 1.5 cups Hot water
  • 0.5 cups Granulated sugar
  • 0.5 cups Fresh lime juice
  • 1 cups White rum
  • 10 pieces Fresh mint leaves
  • 1 teaspoon Lime zest
  • 0.5 cups Cold water
  • 2 drops Optional: Green food coloring
  • 10 pieces Lime slices or mint leaves (for garnish)

Directions

Step 1

Pour the cold water into a medium mixing bowl. Sprinkle the unflavored gelatin powder evenly over the surface of the water to allow it to bloom. Let this sit for 5 minutes.

In a medium saucepan, heat the hot water until steaming but not boiling. Add granulated sugar and stir until completely dissolved.

Remove the saucepan from the heat. Add the bloomed gelatin mixture to the hot water, stirring constantly until the gelatin is fully dissolved.
