Ingredients

  • 1 cup (softened) Unsalted butter
  • 1 cup (packed) Brown sugar
  • 0.5 cup Granulated sugar
  • 2 pieces Large eggs
  • 1 teaspoon Pure vanilla extract
  • 1.75 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1.5 teaspoons Ground cinnamon
  • 0.5 teaspoon Salt
  • 3 cups Old-fashioned rolled oats
  • 1 cup Raisins
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes using an electric hand or stand mixer.

Step 3

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

Step 6

Stir in the rolled oats, raisins, and chopped walnuts (if using) until evenly distributed.

Step 7

Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden but the centers look slightly underdone. Do not overbake, as the cookies will continue to set as they cool.

Step 9

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
