Ingredients

  • 1 cup dried hominy corn
  • 10 cups water
  • 1 pound stew beef or bison (cubed)
  • 1 piece smoked pork hock or ham hock
  • 1 teaspoon salt
  • 2 medium carrots (peeled and diced)
  • 2 stalks celery stalks (diced)
  • 1 large onion (finely chopped)
  • 2 medium potatoes (peeled and cubed)
  • 1 cup green beans (trimmed and cut into 1-inch pieces)
  • 2 tablespoons fresh parsley (chopped for garnish)

Directions

Step 1

Rinse the dried hominy corn thoroughly under cold water to remove any debris or dust.

Step 2

Place the hominy corn in a large pot and add 10 cups of water. Bring to a boil, then reduce the heat and simmer for 1 hour, partially covered.

Step 3

After 1 hour, add the cubed stew beef (or bison) and smoked pork hock to the pot. Season with salt. Continue to simmer for another hour or until the corn is tender and the meat is cooked through.

Step 4

Skim off any foam or impurities from the surface of the soup during cooking as needed.

Step 5

Add the diced carrots, celery, and chopped onion to the pot. Stir and let cook for 15 minutes.

Step 6

Add the cubed potatoes and green beans to the soup. Continue to simmer for an additional 20-30 minutes, or until all the vegetables are tender.

Step 7

Remove the smoked pork hock from the pot. If desired, shred any meat from the hock and return it to the soup.

Step 8

Taste and adjust seasoning if needed. Ladle the soup into bowls and garnish with fresh parsley before serving.

Step 9

Enjoy your hearty and traditional Mohawk Corn Soup!
