  • 250 grams Chocolate sandwich cookies
  • 100 grams Unsalted butter, melted
  • 200 grams Dark chocolate (70% cocoa), chopped
  • 60 ml Espresso or strong coffee
  • 2 teaspoons Gelatin powder
  • 2 tablespoons Cold water
  • 250 ml Heavy cream (whipping cream), chilled
  • 50 grams Powdered sugar
  • 2 tablespoons Cocoa powder, for dusting

Directions

Step 1

Line a 8x8-inch square baking pan with parchment paper, leaving some overhang for easy removal later.

In a food processor, pulse the chocolate sandwich cookies until finely crushed. Transfer the crumbs to a mixing bowl and stir in the melted butter until well combined.

Press the cookie mixture firmly and evenly into the bottom of the prepared pan to form the crust. Place in the fridge to chill while preparing the mousse layer.
