  • 4 pieces chicken thighs (bone-in, skin-on)
  • 1 cup brewed coffee
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion (chopped)
  • 0.5 cup chicken broth

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a small bowl, combine the cocoa powder, brown sugar, smoked paprika, ground cumin, garlic powder, ground cinnamon, salt, and black pepper. Mix well to create a spice rub.

Pat the chicken thighs dry using paper towels. Rub the spice mixture evenly over all sides of the chicken.

Heat the olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, add the chicken thighs skin-side down and sear for 3-4 minutes until the skin is golden brown and crispy.
